Mmmm Chicken Soup

Ingredients:

  • 1-2 lbs chicken (remove skin and visible fat)
  • ½  head shredded green cabbage
  • 1 clove minced garlic
  • 2 lbs diced fresh tomatoes
  • 2 chopped celery stalks
  • 3 chopped carrots
  • 2 tablespoons chopped fresh parsley
  • ½ teaspoon dried basil (optional)
  • ½ teaspoon dried thyme (optional)
  • 4 cups chicken or vegetable stock (can also use low-sodium canned stock or water)
  • Freshly ground pepper to taste
  • 2 tablespoons fresh lemon juice or 2 tablespoons cider vinegar

Direction:

In a large heavy bottomed soup pot, bring all ingredients, except lemon juice or vinegar, to a boil.  Lower heat and simmer 1 hour.  Remove chicken parts or soup bones.  Shred chicken and return to pot.  Add lemon juice or vinegar.  Adjust seasonings to taste.  Enjoy!

Makes 8 servings.
