Mmmm Chicken Soup
Ingredients:
- 1-2 lbs chicken (remove skin and visible fat)
- ½ head shredded green cabbage
- 1 clove minced garlic
- 2 lbs diced fresh tomatoes
- 2 chopped celery stalks
- 3 chopped carrots
- 2 tablespoons chopped fresh parsley
- ½ teaspoon dried basil (optional)
- ½ teaspoon dried thyme (optional)
- 4 cups chicken or vegetable stock (can also use low-sodium canned stock or water)
- Freshly ground pepper to taste
- 2 tablespoons fresh lemon juice or 2 tablespoons cider vinegar
Direction:
In a large heavy bottomed soup pot, bring all ingredients, except lemon juice or vinegar, to a boil. Lower heat and simmer 1 hour. Remove chicken parts or soup bones. Shred chicken and return to pot. Add lemon juice or vinegar. Adjust seasonings to taste. Enjoy!
Makes 8 servings.
